My wife and I have done 3 cross country (Trans Am/Western Express, Sierra Cascades, Atlantic Coast) trips with decent panniers in the last 10 years. We are working on the Divide Trail at the moment and decided to upgrade our pannier set up. If you're looking for a pannier/trunk set up for your rig just get the Back Roller Classics and an Ortlieb Rack Pack (30L seems about right) to clip on the panniers and you're set for life. If you really want to get spiffy put a small trunk on the back rack so that most of the Rack Pack weight is on the rack and not the panniers. I know this review is for the Front Roller Classic panniers which I bought for another touring bike but I use one of them for my commuting bag. Perfect size and SUPER easy and fast to put on/take off. Again Back Roller Classics with a Rack Pack (so easy and quick to attach to the panniers) and you are good for about as long as you want to stay out. Water proof too. If you're in the market for panniers spend the extra for the Ortliebs and the Rack Pack, you won't be sorry.
